Beth Zarrow

Development & Events Specialist

Beth brings her passion for education, community building, and meaningful connection to her role as Development and Events Specialist at Light Root Farm and Learning Center. With a rich background in education, program coordination, volunteer leadership, and community engagement, she excels at creating welcoming spaces that bring people together around shared values and purpose. Beth advances the farm’s mission through strategic fundraising, thoughtful event planning, and relationship building, helping to sustain and grow programs that connect people to the land in restorative and inspiring ways. As a longtime supporter and parent, her favorite part of the farm is witnessing the lasting impact it has made on her own children. She also has a deep love for the draft horses, whose quiet strength reflects the heart of the farm itself.

Ethan Jones

 Dairy Team Member & Draft Animal Intern

Ethan joined Light Root Farm & Learning Center in the fall of 2024 as part of the Dairy Team and began training as a Draft Animal Power Intern in 2025. For years, he admired the farm from afar, often driving past and feeling a strong pull to get involved—especially knowing they worked with draft horses, a skill he’d long hoped to learn. As a nature-based therapist, discovering that Light Root also hosted therapy programs deepened his connection to the farm’s mission. Ethan has been involved in agriculture in Boulder since 2021, primarily in meat and dairy farming, and is grateful to be part of a team that blends regenerative agriculture with meaningful community impact. Ethan's favorite part of the farm is connecting with the energy of Light Root. The land and all its inhabitants exude a specialness that feels both like a homecoming and an opportunity for healing, education, and growth.

Louisa Earlandson D’Amico “Lou”

Farm Education and Dairy Intern

Lou joined Light Root Farm & Learning Center in the spring of 2025 as a Dairy Intern and Farm Community Programs staff member. Originally from the Garden State, she grew up picking tomatoes and basil in her backyard, sparking a lifelong love of working with the land. After two years on the West Coast as a farm-to-school educator—while volunteering with conservation groups and working on small farms—Lou moved to Boulder. When she discovered Light Root, she immediately felt aligned with its mission. Her passion for regenerative agriculture, education, and community engagement makes her a natural fit for the farm’s work. Lou’s favorite part of working at the farm is having community classes and building a relationship with the dairy herd.
